Vito Scaduto M.C.A.
Born in Siculiana, Sicily in 1969 to farming parents, my career began in the local bar at the age of 13. I went on to study Restaurant Management for three years at catering college, and during two consecutive summer seasons I worked in Lucca, near Florence. I spent the following year in Vieste del Gargano, situated south of Puglia. In 1986, I moved to England, working in Stratford-upon-Avon for six months and then moving to Bath and the Francis Hotel and then a short stint at the Royal Crescent, before moving to the newly opened Bath Spa. After 3 years, I moved to Carden Park near Chester, and then onto a spell in Guernsey.
In 1994, I came back to England, taking the position of Restaurant Manager at the five-star Swallow Hotel in Birmingham before returning to Bath to join The Bath Priory Hotel and Restaurant as Restaurant Manager in 2001. I was promoted to Deputy General Manager, but remained very ‘hands-on’ in the restaurant. In 2009, I took over Red or White in Trowbridge. The building underwent a full refurbishment and opened as a restaurant with a bar and wine shop. In 2011, I moved the business to Bradford-on-Avon and into the historic building of the Three Gables. We took 12 months to restore the building to is former glories, once more becoming a focal point of the town it had served for almost four hundred years). Here, we were awarded the AA’s Notable Wine List for six years, and won the ‘Wiltshire Life Restaurant of the Year’ in 2016.
During my years in England, I have enjoyed participating in numerous competitions and in 1993 was delighted to be awarded the ‘Head Waiter of the Year’ by the Caterer Magazine and more recently, the highly-acclaimed Master of Culinary Arts.
I enjoy training future generations in the old restaurant skills and believe that making guests feel comfortable and at ease is paramount.
My passion is finding wine producers who have an individual approach to sourcing wines, some of which will be unusual and all of which are of the highest quality.
In 1994 at the Swallow Hotel I put together wine lunches and dinners on a regular basis for customers who expressed an interest in wines and food. Moving to Bath in 1997 I took this concept to the Bath Priory where the events were very popular and met with great success. In 2006, I decided to hold five days of events – the Italian Wine and Food with guests chefs and producers including Angelo Gaja, Ben Glazer, Marchese Ferdinando, Giuseppe Tasca, Nathalies Schyler, Sebastiano Rosa and wine writers Michael Broadbent, John Radford and Michele Shah.
Over the last 15 years I have arranged some exciting wine trips for regular and loyal customers to Piemonte, Rioja, Rhone, Veneto, Tuscany, Franciacorta, and twice to Sicily, my home. The trips have been with groups small in number, which allows more of a one-to-one personalised experience, for me to give each person a greater understanding and to ensure that they discover and enjoy wine making, local food and all the tradition and history of the places I love and am so inspired by.
